Recipe Recap: Baked Breaded Tilapia

This recipe's definitely a keeper. It was easy to put together (other than the fish, I had everything in my cabinet) and it tasted great. The breading's flavor wasn't overpowering, and the tilapia had a nice crunch to it.

I rounded out the meal with Steamfresh peas and some Uncle Ben's Rice Pilaf.

Oh, I did mix up a little mayo and horseradish sauce for us to dip our fish into. The fish didn't NEED the extra flavor, but we tend to like dipping sauces.

Baked Breaded Tilapia

Ingredients:
1 c. breadcrumbs
1 T. grated Parmesan cheese
1 t. Italian seasoning or Oregano
1/2 t. salt
1/4 t. pepper
2 - 3 T. vegetable oil (I used olive oil)
1.5 lbs tilapia (or other white fish) filets (I used 1 lb)

Instructions:
1. Preheat oven to 375F. Lightly grease a baking sheet.
2. Combine everything but the oil and the fish in a Ziploc bag and shake-shake-shake to mix everything together.
3. Pour oil in a small bowl and brush a little onto both sides of each filet, then drop the filet into the bag and shake-shake-shake to coat well. Remove from bag and place on prepared baking sheet.
4. Bake for 10 minutes, then turn over and bake another 5 to 10 minutes or until fish flakes easily. (Mine only needed an additional 5 minutes.)


Voila, a gourmet meal (by our standards anyway) in less than 30 minutes!
