Mondays are tough so I think starting the week with some treats is the way to go. Spoonful of sugar – literally – and all that stuff.
I made these to share with Kim and Greg. A group of us went to dinner then popped in to visit with the parents-to-be on a Friday night a couple weeks ago. See, Kim’s under house arrest on modified bed rest thanks to gestational hypertension so she needed some friendly faces and a gooey dessert to distract her.
I hold onto some recipes for forever before finally getting around to trying them. This one, though, for Caramel Cinnamon Swirl Bars, went straight to the top of the list so I could make it the first time I had a good reason to blend sugar and butter together.
These were a perfect blondie texture and the caramel layer in the middle was, um, the icing on the cake?
The hardest part of this recipe was unwrapping all the caramels. I think I need to try those caramel bits to save myself the little bit of trouble next time.
Did everyone have a good weekend? We watched fireworks at Heather and Bruce’s on Friday, which made for a late night so both the McHusband and I ended up skipping our early morning workouts Saturday morning. He ended up going for a run, but I never did muster up the energy to do much more than help bathe the dogs and lay out prior to an afternoon nap.
But I made up for my lazy day on Sunday. I ran just under 11 miles, took care of my own honey-do list including mopping the kitchen and cleaning the guest bathroom, and made sure my McHusband ate a good dinner. We had Crockpot Beer BBQ Chicken and our favorite Cajun sweet potatoes, both of which were awesome and hit the spot.
