I have a recommendation for you guys. I know your jaws will drop when I tell you it’s something to eat.
I got my new issue of Southern Living last week and as soon as I saw this recipe, I knew we’d be eating it soon. Sure, I was saving that second pie crust for another cookie pie, but I decided we probably needed real food more than we needed more dessert. I had everything but the shredded cheese so I picked that up during a trip to Wally World and we were all set.

I threw this together while the McHusband was working out and Connor was mostly chilling in the Bjorn. Actually, the former helped measure a couple things during a break between sets when the latter was being fussy. Gotta give credit where credit it due.
To make this even easier on myself, I used a bag of Jimmy Dean Turkey Crumbles. I’ve used them in several casseroles, in meat sauce, and even in a breakfast bread, and they’ve always worked out great.
When I make this again – and yes, I mean when and not if – I’d like to try to spice it up a bit with either some red pepper flakes or maybe a can of diced chiles. Also, I think it’d be good to cut back a little on the cheese and maybe replace it with some spinach.
If you’re looking for something easy, quick, delicious and filling, put this quiche on your list.

Funny, we had quiche last night ourselves...ours was from my OLD yellowed and stained recipe card. I used to fix it for Kevin's birthday for many years. I don't think until recently that I had made it since he went off to college. Ours was diced ham, asparagus, red pepper, basil, and onion and lots of yum! And they say real men don't eat quiche...what do "they" know?
