{Recipe Recap} Brown Butter Toffee Chocolate Chip Cookies

I have more cookies for you today.  And the ironic thing is I told the McHusband last week that I really don’t enjoy making cookies all that much.  I don’t know if it’s because of the batch after batch you end up making so it seems like a never-ending process or if it’s that they are much iffier than bars or cupcakes.  You don’t know that they’re going to turn out with the right texture and that can be a dealbreaker in my book.

I pinned these cookies a while back, and Chelle had taken note of them.  She suggested that they might be a good birthday treat, and I agreed since a group of us was going to a restaurant for dinner and those would be portable and easy to share.

We celebrated Chelle’s birthday, which was yesterday, and Eric’s, which was on the 31st, at The Angus Barn.  It’s tradition to go there for Eric’s birthday and he was gracious enough to share the celebrating with Chelle.

But enough about the people, let’s go back to the cookies.  These were thick and chewy with a slightly crusty exterior.

I used Ghiradelli milk chocolate chips, Scharffenberger semi-sweet chocolate chunks, and of course the toffee pieces.  I also sprinkled some sea salt on the dough just before baking.

These cookies gave my current favorite, the NY Times Chocolate Chip Cookie, a run for its money.  These were easier in that they used only one kind of flour and the required chill time was much less (1 hour vs. 48), but I had to brown the butter first, which isn’t a difficult task, but it is a step that adds a little extra time.

I opted to chill my dough overnight, and I think that’s the minimum amount of time I’d always opt for.  I scooped the dough into “balls” and put them in Tupperware so they were very easy to bake the next day.

I highly recommend this cookie.  If you’re used to using the recipe on the back of the Nestle bag, these will be a very nice change of pace.  And I promise, they really aren’t that much more work AND the payoff is much greater.

I’ll end with a group shot of us girls (the McHusband, Terry, and Shawn went too) from City Limits Saloon.  Who would’ve guessed that at 34 weeks pregnant, I’d be out bar-hopping (we went to Rum Runner’s first) and not get home until 2:30 in the morning?
