{Recipe Recap} Glazed Funfetti Donuts

First, a question: Are they donuts or are they doughnuts?  I think mine are donuts because they were made from batter, not dough.

If it’s doughnuts you want, get some from Krispy Kreme.

But back to my donuts.  I made them for a coworker’s birthday.  He was going to be in the office for an 8:30 meeting on Friday and donuts seemed temporally appropriate.

The batter came together quickly and easily and then I used an icing bag and my big round tip to squeeze the batter into my donut pan, which Chelle was kind enough to donate to my arsenal of baking tools.

The donuts baked for just 7 minutes, which was good since I ended up with three batches of them.

After they baked and cooled, I dipped them in a warm glaze then set them on the cooling rack so the glaze could harden.  All the donuts got the glaze, but I ran out of the frosting, which is why two of them are, well, naked.

The frosting is simply powdered sugar and milk and while I’m normally of a “more is better” mindset when it comes to frosting, the teaspoon or so that I spread on top of the donuts was just the right amount.

I didn’t have one of these until Friday evening and then I ate two, one half at a time.  These donuts were dangerously good and quite addictive.

I’m excited to try more versions of baked donuts, like these Peanut Butter-Glazed Brownie Donuts.

Donuts for your Monday morning – not a bad way to start the week, huh?

And speaking of donuts, guess what I’m this Saturday?  Running in the Krispy Kreme Challenge for the first time.  For those of you unfamiliar with the event, let me explain how it works.  You run 2.5 miles, eat or grab your dozen donuts, then run 2.5 miles back to the finish line.  Official challengers must eat all 12 donuts and cross the finish line in under one hour.  Doing it without puking gives them extra bragging rights, but it’s not required.

I am registered as a casual runner, not a challenger, so I will just grab my dozen donuts and carry them to the finish line.  I’ve already looked up some recipes so that I can bake with my donuts instead of just eating them one right after another.

I think Lisa is participating too...I might could even do that...walking the entire way AND eating the KK doughnuts! McMom
